RAW MATERIAL
• 100% red tempranillo grape.
• Vineyards are more than 25 years-old – D.O. Ribera del Duero (Spain)
• The grapes come from various parcels from 17 hectares of vineyard consisting of different soil bases
(limestone, sand, marl, etc.) limited to an output of 4,000 kilos per hectare, which contribute different
qualities as to bring forth a greater complexity to the wine.
WINEMAKING
• RESALTE CRIANZA is made in 15.000 liter stainless steel tanks under strict temperature control.
• A cold maceration and pre-fermentation are done between 8-10º, in which all the aromatic potency is
extracted.
• Fermentation is done under strict temperature control, with a gradual thermal increase in temperature not
surpassing 30º C, permitting a highly controlled extraction the best characteristics, total maceration time
around 25 days.
• Gravity filling, pumping over and racking.
• 15 month rest in 80% French and 20% American oak barrels coming from the best cooperages.
• Barrels are renewed every 1-3 years.
• Minimum rest of 2 months in stainless steel tanks to finally blend aromas before bottling.
• 12 months in bottle before its release to the market, to bring forth the final balance.
