About This Wine:

Jean and Vincent Daux began producing wines with the 1997 vintage.  They use no new oak for the production of their chardonnays relying instead on neutral large fudors and tank aging for elevage.  “Maizieres” is on well drained soils with very thin topsoil which contains very little clay (instead being mostly sandy).  It was planted with vine between 1983 and 1986.  This unoaked chardonnay is broader and softer than the Chablis but shows enough acidity in the finish to remain fresh and not appear fat. The rich flavors of browned apple and pear combined with wonderful wt and mouthfeel make this a true value.

Fish, frogs, snails, white meat in creamy sauce.
