What Does It Taste Like?

Winemaker Bob Varner makes Foxglove in a modern style that's meant to bring out the true terroir of Paso Robles; it captures all the warmth of the area, but none of the sappy, over ripe flavors often associated with Paso Robles. Foxglove contains a small percentage of Petit Verdot and Cabernet Franc, which round out the fruit; it is produced with exacting standards and tremendous attention to detail, resulting in a simply excellent red. This is a California wine.

"The 2009 Cabernet Sauvignon is a huge, unoaked wine bursting with dark red fruit, sweet flower, spices, leather and licorice. The Cabernet Sauvignon saw no oak at all; the richness comes just from the intensity of the fruit. This is one of the very finest wines being made from Paso Robles fruit, and I say that after having tasted over 500 wines from Paso recently. Frankly, it puts most of what is being made in Paso in this price point to shame. Anticipated maturity: 2012-2016.

"Also a strong effort, the 2008 Cabernet Sauvignon (94% Cabernet Sauvignon and the rest Petit Verdot and Cabernet Franc) was aged primarily in tank with a small amount in oak. It is a seductive, authentic tasting, slightly herbaceous Cabernet that is dominated by black currant and black cherry fruit notes. With medium to full body, round, soft tannins, and a juicy finish, this delicious, endearing wine should drink well for 4-5 years or longer." - Robert Parker (8/2010)

"Foxglove also scores highly with their 10,800-case cuvee of 2007 Cabernet Sauvignon. A blend of all-Paso Robles fruit and composed of 94% Cabernet Sauvignon and the rest Petiti Verdot and Cabernet Franc, the wine has a dense ruby/purple color and plenty of black fruit intermixed with loamy soil undertones, licorice, and spice. The wine is luscious and. medium to full-bodied , with silky tannins and a heady, opulent finish. Drink it over the next 2-4 years, although it could last a lot longer.

These are absolutely spectacular bargains from the very high-quality Varner Winery in the Santa Cruz Mountains. This is their less expensive line-up of wines, and I encourage readers to try them – they are true winners." - Robert Parker (8/2009)
