Vineyards:
The fruit used in the production of this wine is grown on 60 hectares of vineyards located in southern Piedmont in the heart of the DOCG production area. Although the soil does vary, it is predominantly composed of white marl. Planted on the southern facing slopes surround Santo Stefano Belbo, altitudes range from 200-400 meters above sea level. The guyot training method was implemented allowing for a density of 4500-5000 vines/hectare.

Winemaking:
Harvested by hand in the first half of September. The delicate grapes were transported to the nearby cellar to be soft-pressed. Alcoholic fermentation took place in stainless steel tanks over 6 days at a low temperature of 18-20°C. Filtration took place multiple times to remove all unwanted substances before the wine was transferred into pressurized tanks. Using the Charmat method, the wine underwent a very brief secondary fermentation. By partially fermenting the sugars, a slight fizz was created. Fermentation was halted by chilling the wine, thus killing all the yeasts. The wine was bottled and released shortly after.

Tasting Notes:
Moscato d’Asti is mildly fizzy with a fresh, fragrant bouquet composed of aromas of peaches and apricots. On the palate, it is clean and pleasantly sweet with a crisp, refreshing finish.

Food Pairings:
The perfect dessert wine, it pairs excellently with fruit tarts, pies and salads. Ideal with Panettone, a festive holiday bread made with candied fruit. Serve chilled.
