Notes from the Winery:

ABOUT VINEYARD 7 & 8
Vineyard 7 & 8 produces 1,800 cases annually and is located at the top of Spring Mountain. The 40 acre vineyard and winery is owned and managed by the Steffens family along with winemaker Luc Morlet and vineyard manager Pete Richmond with Silverado Farming Company. The vineyards of the estate were established in the early 1980s and are currently planted to ten acres of Cabernet Sauvignon and four acres of Chardonnay. These vineyards, which lie above the fog, bring late ripening, low yields, natural drainage, and infertile volcanic soil. Our onsite winery facility allows us to micromanage the entire process, beginning in the vineyards and ending with the consumer.

Release Date: October 2010
Fruit Source: Blend of Younger Estate Fruit and Spring Mountain Fruit from Select Growers on the Mountain
The 2007 Growing Season:
An average bud break and another drier than average winter, lead to a slightly below average crop. Mountain fruit benefited from being above heavy fog and from air circulation. The ripening season started with a quick heat spike but finished with mild temperatures which were pleasing to the Cabernets. Wines from the 2007 vintage are concentrated and rich with some youthful tannins.
Varietal Composition: 100% Cabernet Sauvignon
Harvest: Hand Picked at physiological ripeness throughout early to mid October 2007
Fermentation: Double hand sorting, whole berry fermentation, average maceration of 30–45 days.
Cooperage: 18 months in 90% new French Oak from select artisan coopers
Alcohol: 14.8%
Case Production: 700

What Does It Taste Like?

“The 2007 “7” Cabernet Sauvignon was one of my first two Cabernets produced at Vineyard 7 & 8. As with the “Estate” Cabernet, the focus of this wine is to show a wine with a true sense of place for the Spring Mountain District. The fruit consists primarily of fruit from a select group of growers on Spring Mountain, as well as some fruit from the younger Estate vines. Intense and rich, the “7” Cabernet displays a complex bouquet of black and red berries, intermixed with roasted and mineral notes. The youthful tannins are true to their mountain origin and will age beautifully over the next decade or more.”
—Luc Morlet, Winemaker

Ratings & Reviews

91 Points - Robert Parker's Wine Advocate:
"The opaque purple 2007 Cabernet Sauvignon exhibits cassis, charcoal, graphite, and sweet tannins in an exuberant, opulent style that would please both Joe the plumber and the connoisseur. It is deep, fleshy, and best drunk over the next 10-15 years.

None other than the well-known Luc Morlet makes the wines at this winery on Spring Mountain." -Robert Parker (12/2009)

91 Points - Wine Spectator Magazine:
Dense, chewy, firm and compact. Tightly wound, offering a full body and complex flavors of graphite, blackberry, currant and black licorice, with the fruit pushing through on the finish. Drink now through 2017. 725 cases made. –JL

89-92 Points - Stephen Tanzer's International Wine Cellar:
"Saturated bright medium ruby. Ripe black fruit nose shows a slightly syrupy quality. Concentrated, large-scaled and fat but a bit high-toned and chunky-even porty-compared to the Estate wine. The wine's slightly roasted character is leavened by underlying minerality. Finishes with palate-saturating fruit and a boatload of tannins." - Stephen Tanzer (May/June 2008)

92-95 Points - Stephen Tanzer's International Wine Cellar:

"Saturated ruby. Captivating nose offers black raspberry, smoke and a hint of game; the first vintage here to avoid herbal aromas. Then fat, dense and substantial, with a chocolatey ripeness to the mouthfilling, layered dark berry flavors. A superb example of powerful mountain fruit, and at a completely different level from the earlier vintages. The superb rising finish features big but thoroughly ripe, silky tannins that coat the cheeks and teeth. This features 75% estate fruit, with much stricter crop thinning practiced during the summer." - Stephen Tanzer (May/June 2008)

93 Points - Wine Enthusiast Magazine ('06 vintage):

"A lovely Cabernet Sauvignon that shows its fine mountain pedigree. Accessible now, with decanting, for the upfront blackberry, black currant, plum, sweet cedar and mineral flavors that feel so rich and balanced and drily tannic. Should develop well over the next 6-8 years." - S.H. (2/1/2010)

93 Points - Wine & Spirits Magazine ('06 vintage)
