Don de Dieu (Gift of God) was the name of the ship that Samuel de Champlain sailed on his mission to “explore and discover the vast and perilous land of America” in the name of the King of France. His travels led to the founding of Quebec City in 1608 (a modification of the Algonquin word “kebec” which means “where the river narrows”). Inspired by this great adventure, Unibroue created Don de Dieu an abbey-style triple wheat ale refermented in the bottle.

Westmalle Tripel is a clear, golden yellow Trappist beer that undergoes a secondary fermentation in the bottle (9,5% alcohol). It is a complex beer with a fruity aroma and a nice nuanced hop scent. It is soft and creamy in the mouth, with a bitter touch carried by the fruity aroma. An exceptional beer, with a great deal of finesse and elegance. And with a splendid long aftertaste.

The Westmalle Tripel is indeed called the “mother of all tripels”. This type of beer was first brewed in Westmalle abbey in 1934 when the new brewing hall came into use. The current formula has stayed practically unchanged since 1956, thus more than 50 years.

This amber beer with strong pronounced honey aromas, has, very predictable, a dominating taste of honey. But we cannot catalogue this Bière de Miel biologique in the range of sweet beers, on the contrary. The sugar in the organic honey, fully refermented in the bottle, creates a beer, not sweet at all but full of honey aromas and ditto taste.

The Cervesia is a blond top fermentation beer with refermentation in the bottle.
On demand of the “Archéosite d’Aubechies”, which is an archeological site in a little village nearby the brewery, this beer was created in 1983, exclusifly for this site.  The most unusual composition of this beer is due to a long and intens research by Mr. André Hallard, at that time “Master of Research” of the F.N.R.S. 

The aromas of flowers and herbs, a very fresh and spicy touch but also a lot of hidden aspects are the result of a mixture of barley and malt, hop and many different herbs and spices. The association of these barley and wheat malts make this Cervesia a very fresh and thirst-quenching beer. A real refermentation in the bottle, even for many years in your cellar, results in a very unusual beer.

ABV: 8.0%

The Bière de Belœil is a top fermentation beer with refermentation in the bottle and with   an amber colour.
The creation of this beer in 1988, happened on demand of the village of Belœil, well-known for its “Château de Belœil”. Although at first only available in this area, the demand of this amber beer is becoming more and more increasing.

Its colour, taste and aromas are the result of a brewing process, which is a mixture of 5 different types of malt.
When tasting, especially the aromas of these special malts, in combination with the fine hop varieties, will dominate.
This rather complex beer has a real refermentation in the bottle which will continue for a long time in your cellar.

ABV: 8.5%

Brouwerij Slaghmuylder Witkap Pater Stimulo Singel (750 ml)

Witkap·Pater Stimulo is a refreshing gold-colored beer of high fermentation and with fermentation on the bottle - thus a living beer with evolving taste. Pored with care you get a rich, white and stable foam collar with a creamy structure and sticking to the glass. You can smell the aromatic hop flowers of Erembodegem near Aalst (Belgium), a local natural product. You can also smell a strong ferment typically for the Witkap-Pater. Their are no other taste-makers used. During degustation you get a taste sensation starting with a soft mouth filling taste, passing in the a refreshing taste and ending with a tasty hop-bitter after taste.

Castelain St. Amand French Country Ale (750 ml)

St. Amand is a classic of the traditional Biere de Garde style. St. Amand contains only artesian well water, barley malt from the Champagne region and hops from Alsace. It has hints of plum and sweet caramel malts. A dynamite beer with steak and chop and bistro fare in general.

The first taste is of mild fullness with an accompanying coffee tone, which becomes more dominant with the aftertaste. There is very little of the sweetness that is frequently to be tasted with doppelbock beer.” The Ayinger Celebrator has been ranked among the best beers of the world by the Chicago Testing Institute several times and has won numerous platinum medallions.
