About the Cognac:
The Dudognon Reserve is one of the best values in Cognac. Made without additives or coloring, it's a pale gold color with subtle citrus and white fruit aromas. The palate is clean and long with tea, earth, citrus and spice. Far superior to the brand-name VS or VSOP blends and really worth trying.

A carefully chosen blend of younger brandies, with an average age of 7
years: 20% from barrel distilled in 1998, 40% from barrel distilled in
2000 and 30% from barrel distilled in 2003. Elegant oxidation and long
fermentation heighten the maturity and baking spices of the brandy’s
oak, like biting into an apple then waiting 20 minutes before returning
for a second nibble.
The apples are a mixture of the four categories: sweet, bittersweet,
acidic and bitter composed of numerous include Domaine, Bedan, Fagotier,
St. Philbert, Frequin Rouge, and the acidic Rimbault, Petit Jaune and
Blanc Sur.
Soft, sweet with great acidity and sings with notes of green apple,
vanilla and baking spice. Showing forthcoming apple flavors, along with a
touch of vanilla, smoke, spice and subtle hint of beeswax.

While most people refer to Calvados as an apple brandy, pears are also
allowed in the AOC. In the Domfront, or Domfrontais region, the clay and
limestone soils are much more suited to the strong, deep roots of pear
trees. Appellation law insists that at least 30% of the cider to be
distilled in the Domfront is made of pear. The Lemorton family’s
Calvados includes up to 70% pear. This pear influence makes not only for
a lighter-colored spirit, but also one which emits a more elegant
bouquet. The Lemorton family has a long history in the Domfront, with
Didier now running the domaine, 6 generations later. Their 9-acre
property is planted with both apple and pear trees, but the latter’s
influence is dominant; for every 3 apples in their Calvados, there are
approximately seven pears. Lemorton owns his own travelling column still
and as AOC law states a single distillation is required with Didier’s
Calvados exiting the still at a fiery 70% ABV.

Located in the quaint village of Montréal-du-Gers, the vines of Chateau de Pellehaut are planted on several different types of soil, including mixtures of clay and limestone along with sand interspersed with small limestone pieces. Pellehaut from the roman pila haut (high point) is owned by the Beraut family. In addition to making a wide range of fantastic table wines, their spirits are some of the finest in the central region of Armagnac, the Tenareze. Their Reserve bottling is a blend of various vintages that over time have mellowed to become highly fragrant.

Nice golden color with darker tints. Very interesting nose where we feel some oaky flavors like tobacco or toast but also fruity (dry fig, prune). Very complex. In the palate, the tannins are still present. The spicy flavors (pepper, licorice) are present. Long in the palate.
