90% Merlot and 10% Cabernet Franc. Château Roc de Candale is a lively and concentrated wine offering lush aromas of cherry and vanillin oak, a layered mouthfeel, good tannic structure and a long, well balanced finish. Comprised of a blend of lots not used in Château de Candale, Roc de Candale was treated to the same vinification protocol. Individual lots were cold soaked in oak tanks for five days at 7 °C, with periodic pump overs and light punches to cap. The wine was fermented separately by lot and grape variety in thermo-regulated oak tanks for up to 45 days. Secondary (malolactic) fermentation took place, sur lie in barrel. The wine was barreled down separately by lot and varietal to preserve the integrity of the individual components for the final blend.

The 2007 Napa Valley Merlot is a wonderful snapshot of a legendary vintage. Classic aromas of ripe plums, black cherry, ripe currants and chocolate jump form the glass. Rich, vibrant flavors of blackberry, soy, dark chocolate and vanilla coat the palate. The wine is a true pleasure to drink now but will reward cellaring of five to six years if you can keep your hands off it!

Our Bordeaux-style wine is named after the Fremere family (actually spelled Pfremmer or Pfrimmer), Maureen's maternal great grandmother's family line who immigrated to America from Alsace France in the early 1700s. Later as a pioneer family they came west via the Oregon Trail and settled in Idaho and raised livestock, fowl, nuts and even possibly grapes on their family farm for generations. The bigness of the Cab comes through in this wine with dark stone fruit flavors, currant, espresso and the mouth feel of a Cab. The upfront entry gives way to nuances of cigar box, truffles, cinnamon and cloves.
