Jean and Vincent Daux began producing wines with the 1997 vintage.  They
use no new oak for the production of their chardonnays relying instead
on neutral large fudors and tank aging for elevage.  “Maizieres” is on
well drained soils with very thin topsoil which contains very little
clay (instead being mostly sandy).  It was planted with vine between
1983 and 1986.  This unoaked chardonnay is broader and softer than the
Chablis but shows enough acidity in the finish to remain fresh and not
appear fat. The rich flavors of browned apple and pear combined with
wonderful wt and mouthfeel make this a true value.

Explosive aromas of pineapple, creme brulee, poached pear, and honeysuckle jump from the glass of the 2007 Chardonnay Charles Heintz Vineyard. Its light straw/green color is followed by under ripe apricot and pineapple aromas and flavors, good acidity, lots of body, and loads of fruit. This gorgeous Chardonnay can be enjoyed over the next several years.

Since 2008 we feel that our Chardonnay style has really become a hit with our customers. With that being said it is always amazing to me to see vintage differences expressed in the wine. Inviting aromas of warm apple/pear cobbler, orange blossom, cinnamon and hints on anise. In the mouth flavors of warm apple pie, pear, vanilla and green tea give into a full and lush finish. The acidity is perfectly balanced. Another winner!!!!
