Notes From The Winemaker:

Identity

Our 1999 was produced exclusively from the first pressing – the purest – of a selection of grapes from 14 crus in the  Marne. This blend is composed of 29% Chardonnay, 42% Pinot Noir and 29% Pinot Meunier. Nine years ageing in our
cellar allowed this wine to develop a « gourmand » balance between floral and ripe fruit aromas. Produced in small quantities, it is available in 75cl bottles, magnums and jeroboams.

Dosage

Like all our wines, our Assemblage 1999 has a very low dosage - 6 grams per litre. The disgorgement date is indicated on the back label. Minimum maturation in our cellar after disgorgement and before shipment: 6 months to 1 year.

Theme

To illustrate this vintage the French artist Didier PAQUIGNON worked on the theme: FLAMBOYANT, TUMULTUEUX (flamboyant, tumultuous). Didier Paquignon was born in 1958 in Paris, and trained at the « Ecole Nationale Supérieure des Arts Appliqués et des métiers d’Art », followed by the Ecole Supérieure des Beaux Arts de Paris». A large part of his work can be discovered through his different travels - Greece, Albania, Spain... - or alternatively by observing very particular interiors such as the one of the Théâtre du Vieux Colombier. Luc Simon says of Didier Paquignon : Painting took him by the extremity of his fingers, he followed her obeying and refusing.


What Does It Taste Like?

Eye: Visually, the wine shows a deep gold colour animated by a very vivacious and fine effervescence: it is tumultuous and flamboyant.

Nose: Aromas of ripe fruit to the fore, dominated by citrus notes. Then hints of red fruits - raspberries / cherries… - gently appear, and after a few minutes in the glass notes of honey develop and enhance the generous and warm personality of
this great wine.

Palate: When tasted, the first impression combines freshness and length. Fruit and spicy notes are well balanced, offering a gourmand impression. Freshness, ampleness, and length characterise this 1999 vintage.

"Pale to medium lemon-straw colour. The nose reveals a good intensity of honey buttered toast and praline aromas complimenting the dried apricot and apple slice fruitiness. There are plenty of frisky, very fine and persistent bubbles on the palate injecting life into the rich, nutty style. Medium to high acidity and a long creamy finish. Drink now – 2015. "Ripe in structure and fruit, this wine still keeps a steely backbone of minerality. The flavors are of pears, pink grapefruit, orange zest, all fine tangy fruits that also keep plenty of acidity and freshness.
