Notes From The Winemaker:

In keeping with Dom Pérignon’s expressed ambition in 1668 to create the “best wine in the world,” Dom Pérignon OEnothèque represents the supreme homage to his vision.

Once the Dom Pérignon style has been achieved after seven years and the vintage released, a limited number of bottles is set aside to begin a second period of aging. Six additional years – for a total of no fewer than thirteen years in the cellar and are required to take the wine to another destination: Dom Pérignon OEnothèque.

The metamorphoses the wine passes through during its journey are based on a mystery. Only the Chef de Cave knows when the moment has come to pronounce it ready for Dom Pérignon OEnothèque. Once the decision has been made, the bottles are manually disgorged, liquored and recorked. Each bottle is tasted and approved by a Dom Pérignon oenologist, who ensures its excellence before it leaves the cellar.

"Green-tinged gold. Deep, smoky, exotic bouquet of poached pear, yellow plum, nectarine, lees and cured meat. Lush and creamy, with intensely smoky orchard fruit flavors and a sweet/spicy cinnamon toast quality. Deep, chewy and expansive on the finish, where the cinnamon and toasty lees flavors echo with noteworthy persistence. Complex enough to enjoy now but has the depth and balance to repay aging."

Robert Parker's Wine Advocate - 93 Points:
"Medium lemon-straw colour. Moderately intense nose of lemon curd, kaffir lime leaf, plenty of hot buttered toast and vague hints of chalk and crushed stone. The bubbles are calming a little in the mouth and the very crisp acidity is taking centre stage, yet this wine is drinking beautifully now, providing plenty of yeast and citrus flavour with a generous sprinkling of minerality. Long finish. Drink now – 2012. Tasted October 2008."

Wine Spectator Magazine - 92 Points:
"Seductive graphite, candied citrus and mineral aromas and flavors, with hints of hazelnut and coffee, mark this complex, soft Champagne. Supple, caressing the palate and ending with a ginger and hazelnut aftertaste. Drink now through 2012." –BS
