Winemaking:
The grapes were hand harvested, destemmed and lightly pressed. Vinification took place in sealed stainless steel tanks at controlled temperatures of between 30 to 32°C. The maceration lasted three weeks during which time the desired levels of colour, flavour and fine tannins were extracted. The wine underwent a malolactic fermentation in barrel and was aged in oak barrels, of which 60% were new, for approximately 18 months. The wine was filtered prior to bottling.
Tasting Notes:
The epitome of fine Cornas, this is Domaine Courbis' most dramatic wine. Showcasing great fruit intensity, a silky suppleness on the palate and integrated new oak flavours, this is the perfect combination of power and elegance.

Ratings & Reviews

93 Points - Robert Parker's Wine Advocate:
"Even better than the Champelrose is the 2013 Cornas Sabarotte, which comes from the estate’s 1.5 hectare in the la Sabarotte lieu-dit, which lies just across the valley (and a little to the south) of the Reynard lieu-dit. This is prime terroir composed of pure granite soils. Seeing a long four-week maceration, it sees malolactic in barrel and spends 16 months in new French oak barrels (which is rare in Cornas). Despite the aging, you wouldn't know it by tasting the wine as it offers sensational notes of black and blue fruits, caramelized meats, crushed rock and pepper, with almost no noticeable oak. Full-bodied, forward, beautifully textured and layered, it’s a huge success in the vintage and is a gorgeous wine that savvy readers should snatch up. It will have 15 or more years of overall longevity." - Jeb Dunnuck (Dec 2015)

93 Points - Antonio Galloni's Vinous Media:
"Dark purple. Pungent cherry pit, black currant and candied violet aromas are complemented by suggestions of peppery spices, cola and minerals. Sappy and expansive on the palate, offering intense black and blue flavors and a sexy floral pastille quality. Impressively concentrated yet vibrant and precise, finishing with noteworthy clarity, sneaky tannins and strong, mineral-driven persistence." - Josh Raynolds (Mar 2016)
