Notes from the Winemaker:
2005 Domaine de Chevalier dry white was very closed and earthy at the beginning. Today it has a very explosive nose of peach, apricot and nut with spices and earthy smoky flavors!!! It is really complex. On the palate it is very smooth and fruity with freshness and tasty acidity. Long finish. First class wine Drink 2015-2020

VINTAGE:
Extraordinary climate all along the year. Vines and fruits have never been tired by the weather conditions. Huge freshness and fabulous maturity for all dry whites and reds. Harvest between early September and October 15.

HARVEST: Hand-picked, into small crates. Grapes are picked in 3 to 5 waves for optimum ripeness. Traditional cold settling in barrels.
VINIFICATION: Fermentation in barrels. Age in barrels for 18 months (35% new oak) with batonnage (stirring the lees with a stick)

85% Sauvignon and 15% Sémillon

"Domaine de Chevalier’s fabulous 2005 white offers terrific acidity, body, and texture as well as high acidity, which suggests this wine should enjoy an incredibly long life. I recently had the 1985 at a charity dinner, and it is still remarkably youthful. The 2005 may last just as long, if not longer. Hints of figs, licorice, honeysuckle, and lemon oil are accompanied by a concentrated, dry, nearly austere wine, but there is so much going on, that it should be prodigious with another decade of cellaring. "The 2005 Domaine de Chevalier Blanc is terrific, and while drinking beautifully today, should cruise for another decade or more in the cellar. Caramelized lemons, crushed rocks, and citrus oil all emerge from this rich, weighty, beautifully concentrated 2005 that has racy acidity, tons of extract, and a chiseled, bone-dry finish. 92-93 Points - Vinous:
"(85% sauvignon and 15% semillon) Bright, pale yellow. Musky aromas of mirabelle, lemon, coconut, flint and resin. Large-scaled, rich and dry, with a sappy quality and lovely aromatic perfume to the flavors of pineapple, lemon and minerals. Boasts terrific viscosity for DDC blanc but is rather closed today. In contrast to the 2006, this rather massive wine is showing its semillon side. The long finish stains the palate with flavors of citrus fruit, minerals, flowers and coconutty oak. This is actually lower in alcohol than the 2006 (13.3%, vs. 13.5%) and considerably lower in acidity at 4.2 grams." - Stephen Tanzer (May 2007)
