We are privileged, once again, to be harvesting fruit from some of the finest vineyards in the Napa Valley; both hillside and mid-valley benchland fruit. Our winemaker, Celia Welch, has performed magic in blending this powerhouse of a wine.

Tasting Notes

VARIETAL COMPOSITION: 100% Cabernet Sauvignon.

RELEASE DATE: September 2010.

WINEMAKER NOTES: A text-book growing season, the fruit saw no frost in early spring, or any unseasonably hot or cold weather throughout the summer months. This even, tempered weather in July and August gave way to the slightest of cooling trends come September, which allowed a careful and unhurried pace at harvest. “Aromas immediately bound forward from the glass waving fresh notes of dark, fully ripe Bing cherries, dark chocolate, vine-ripened blackberries, and a touch of vanilla and cedar. At entry, the wine is warm and very full-bodied, with flavors of warm, ripe purple fruits (boysenberries, blackberries) and a touch of warm cherry juice. There is a hint of pipe tobacco toward the finish, and a slight suggestion of anise. The wine impression fades with a lingering sensation of warm berry pie.”

VINEYARDS: The Hollywood & Vine 2007 Cabernet Sauvignon was harvested from five very unique growing regions, all within Napa Valley. The fruit comes from the highest reaches of Mount Veeder, the exceptional terroirs of the Oakville and Rutherford Bench, from the steepest Spring Mountain slopes and rich soils of Coombsville. Harvested in separate small lots between September 7 and October 8, 2007, the vineyards were kept entirely separate in barrels for the first 6 months, then judiciously blended and allowed to “marry” for several additional months of aging before being lightly filtered for clarity, previous to bottling in May of 2009.

BARREL-AGING: Fermented on skins for approximately three weeks, then transferred to barrels (60% new French oak). The wine was aged in small oak for approximately 20 months.

ANALYSIS: Alcohol 14.7% by volume.

CASES PRODUCED: 1210 cases (12 x.750ml), 24 (3 liter).

"Young and highly concentrated aromas favoring raspberries with a hint of black currant join forces with caramel and hardwoods smells in the outgoing aromas of this attractive effort. Supple in feel and somewhat polished given its tender years, this one has plenty of fruit and richness in reserve. Not surprisingly, its latter palate shows considerably more of the coarse tannins that one would expect, and the recommended path is to find it a quiet cellar in which it can sleep a bit." "The real winner here is the 2007 Cabernet Sauvignon 2480. Opaque ruby purple, the wine possesses plenty of new oak but also luxurious amounts of black currant fruit, licorice, graphite and spice. This is a full-bodied, moderately tannic Cabernet Sauvignon that should be cellared for another 2-3 years and drunk over the following 15." - Robert Parker (12/2010)

"Good bright, full ruby. Perfumed aromas of cassis, violet and bitter chocolate. Supple on entry, then silky and pliant in the middle, with a restrained sweetness to its blackberry, mint and spice flavors. Leaves the mouth perfumed, but the wine's firm tannins will require some cellaring. I find this a bit finer-grained and suaver than the very good 2006." - Stephen Tanzer (May/Jun 10)

"The stunning 2004 Cabernet Sauvignon (1,750 cases produced) offers an inky ruby/purple color followed by gorgeous aromas of white chocolate, creme de cassis, licorice, and subtle toasty oak. There is fabulous fruit on the attack, medium to full body, an opulent mouthfeel, and a long finish. This flashy effort should drink beautifully for 15+ years." - Robert Parker (12/2007)
