About the Winery:
Washington’s finest Cabernet Sauvignon sites provided the fruit for the 2017 Dead Horse. The foundation of the blend comes from our custom plantings at Quintessence. These vineyard blocks produce exceptional fruit with incredible purity, intensity and depth. Ciel du Cheval and Red Willow vineyards round out the composition, lending additional layers of complexity and nuance. The weather in 2017 was moderate, without much of the extreme heat seen in previous years. This allowed the fruit to ripen evenly and provided the opportunity for extended hang time. The wine was fermented in a combination of 1.5, 2 and 5 ton open top fermenters for 7-10 days. Every effort is made to treat the wine as gently as possible. The must is never put through pumps and gentle punch downs occur twice per day. The wine is lightly pressed to barrel, where it finishes primary and malolactic fermentation and is aged for 21 months in 83% new French oak. The wine was racked twice prior to being bottled.

"Always dominated by Red Mountain Cabernet Sauvignon, the 2017 Cabernet Sauvignon Dead Horse’s deep, saturated purple color is followed by a textbook Cabernet nose of sweet crème de cassis, lead pencil shavings, dried earth, and hints of cigar tobacco. "Quintessence, Ciel du Cheval, Klipsun and Obselisco fruit make up this wine. Aromas of vanilla, black coffee, dried herb, graphite, plum and dark cherry lead to a full, creamy-feeling, flavorful palate, intertwining fruit and barrel flavors. Coffee notes linger on the warm finish. A firm coil of slightly green tannins gives it support. Allow it some additional time in bottle. Best after 2023. Sean P. Sullivan" - (4/1/2020)
