Notes from the Winemaker:
Own vineyards:
Grapes are sourced from our Ygay Estate: 300 hectares of vineyards surrounding the winery in the southernmost point of Rioja Alta. Altitude ranges from 320 to 485 meters above sea level. It is made from selected vintages.

Grapes are first de-stemmed and then fermented in temperature controlled stainless steel tanks for 9 days, with constant skin contact. During fermentation pumping over and punching down operations are regularly carried out. These processes ensure both effective and gentle color and aroma extraction. Afterwards the solid parts of the grapes are squashed in a vertical press. This is a gentle process that extracts color and ripe tannins from the grapes skin.

Pairing: Hake cheeks in its own gelatin sauce with Iberian ham ravioli; Wild pig sirloin with red wine; Baked glazed veal cheeks with quince and rosemary infused apple; Red bean stew with braised pork jelly cubes.

Serving suggestions: We recommend decanting the wine 30 minutes before serving. Recommended serving temperature: 16° - 18° C (60° - 65° F) to let the wine breathe and show its full aromatic potential.

Grape varieties: 80% Tempranillo, 9% Mazuelo, 8% Garnacha, 3% Graciano.

Alcohol content: 14%.

Manual harvest: From 19th to 23th September 2011.
Ageing process: The wine is aged for 24 months in 225-litre American oak barrels.

Bottling date: 15 September 2014.

"Produced with grapes from a dry and low-yielding year, the 2012 Gran Reserva Limited Edition is a blend of 80% Tempranillo, 9% Mazuelo, 8% Garnacha and 3% Graciano selected from a diversity of plots and soils. The destemmed grapes fermented in stainless steel, and the wine matured in American oak barrels for 29 months. 2012 was a warm year, and it shows in the wine. This also feels like a different era, especially when compared with the latest wines from 2012. It has a combination of a classical and more modern/clean profile. It has developed aromas and notes of bottle age. This is a selection of the most age-worthy vineyards from their estate, but it's not the same as Castillo Ygay. It's selected after one year in barrel for the potential the wine shows. 63,846 bottles produced. It was bottled in August 2015." - Luis Gutiérrez (28th Jun 2019)

"Initial oaky aromas dissipate and settle on road tar blackness. A lush, fleshy palate is braced with acidity, while this gran reserva tastes of plum, cassis, tobacco and brown sugar.
