Notes from the winemaker:
"Monile" is a red wine made from classic grape varieties, with a predominance of Cabernet Sauvignon clone selected on the estate. The very low production per hectare produces a full-bodied wine suitable for prolonged ageing, during which any youthful roughness can be smoothed out. Vinification takes place using selected yeast inoculum in temperature-controlled conditions with lengthy maceration in small stainless steel vats. The following spring, when the malolatic fermentation is complete, the wine is transferred into small, fine oak barriques, where it matures for about 18 months in temperature- controlled conditions. Bottles ageing, again at a constant temperature, lasts for a minimum of 12 months before the wine is released onto the market. "Monile" is only produced when there is a particularly fine vintage , and total production is about 15.000 numbered bottles.

Technical data:

Grape varieties: Cabernet Sauvignon 80%, Merlot 20%
Alcohol: 13,5% vol.
Vinification: fermentation and maceration take place in stainless steel tanks for a period of about 30 days at a controlled temperature of 28°C, followed by natural malolactic fermentation in barriques of French and American oak, with no specific yeasts added.
Ageing: 18 months in barriques, 80% French oak and 20% American oak, of which 50% is new wood, and bottle ageing for a minimum of 6 months.
Colour: very intense deep ruby red.
Aromas: scents of blackberry, cherry, jam, spicy notes, leather, sweet tobacco, iced coffee, mint, hints of caramel.
Palate: the attack on the palate is intense, the harmony and the volume of the whole are perceived together with an extremely refined gustatory timbre, long persistent finish, the aftertaste once more brings us notes of fruit, liquorice, and balsamic hints.
Serve with: medium-hard cheeses , pan-cooked pheasant, jugged hare.

"The 2009 Monile explodes from the glass with a heady concoction of smoke, graphite, blackberries, licorice and tar. This is a decidedly muscular, powerful wine from Viticcio. Ideally, the 2009 should be cellared for another year or two, but it will always remain a big, big wine in need of similarly rich foods. Monile is 80% Cabernet Sauvignon and 20% Merlot that spent 18 months in oak. Anticipated maturity: 2014-2024." - Antonio Galloni (Jun 2012)
