Winemaking
Phaedrus was conceived as a bottling that would capture the terroir of Wolf Family Vineyards in an accessible wine for an earlier release. 2007 Phaedrus Cabernet Sauvignon is blended with 9% Cabernet Franc, 9% Malbec and 5% Petit Verdot. Hand picked and gently crushed, the must was cold soaked then fermented. After a gentle pressing the wine was aged in 25% new French oak barrels for 17 months.



The Phaedrus Vineyard is comprised of Malbec, Petit Verdot, Cabernet Sauvignon and Cabernet Franc and planted in the year 2000 in the westernmost part of our estate on a rocky bench. Each varietal inhabits only a few vine rows and never exceeds more than a ton of grapes. The 2007 Phaedrus Cabernet Sauvignon utilizes this “spice box.” Malbec offers spice and black cherry aromatics. Petite Verdot plumps the wine with a lush, juicy mid palate. Cabernet Franc is loaded with floral and fruit aromatics, along with a luscious mouthfeel. All of which are supported by the richly textured foundation of Cabernet Sauvignon. A complex, forward wine that can be consumed now or will age well over the next 5 years. 524 cases produced.

There are 525 cases of this excellent bargain. It offers a deep plum/purple hue as well as a fragrant bouquet of unsmoked cigar tobacco, sweet cherries, black currants and licorice. "The tannic, backward, yet at the same time, irrefutably elegant 2006 Cabernet Sauvignon Phaedrus has a dense purple color and notes of red and black currants intermixed with licorice, spice box, and graphite. It is pure, rich, medium to full-bodied, but the tannin level suggests 3-4 years of cellaring is warranted. It should last at least two decades. Consultant Karen Culler is the winemaking talent behind these offerings." - Robert Parker (12/2009)

"The more supple 2005 Cabernet Sauvignon Phaedrus is a blend of 86% Cabernet Sauvignon and the rest Malbec and Petit Verdot. Aged 16 months in one-half new French oak, there are 719 cases of this beauty. A dense ruby/purple color is accompanied by loads of creme de cassis fruit intermingled with notions of roasted herbs, coffee beans, licorice, and a subtle touch of background oak. The noble sweetness of the tannins, luscious, velvety textured mid-palate, and long finish suggest this wine can be drunk now or cellared for 12-15+ years. Karen Culler produces these limited production cuvees that are well-worth a search of the marketplace." - Robert Parker (12/2008)
