The Forest emerges from eight parcels spread across 3.7 hectares, Dauvissat's largest holding. "A brilliant rendition of Vincent Dauvissat's emblematic premier cru, the 2017 Chablis 1er Cru La Forest reveals a complex bouquet of oyster shell, crisp green apple and lemon oil mingled with notes of dried white flowers and freshly baked bread. On the palate, the wine is medium to full-bodied, satiny and complete, with a deep and concentrated core, striking energy and cut and a long, mineral finish. Amounting to some 4.5 hectares, La Forest accounts for a third of the domaine's surface area, so it will be the easiest Dauvissat wine for readers to find. "The 2015 Clos Erasmus has a similar level of purity to the 2013, yet is a riper, sexier wine that has an incredible voluptuousness and depth on the palate that’s hard to believe. Kirsch, blackberries, cassis, graphite, liquid rock, dusty earth, and violet characteristics all emerge from this sensational, full-bodied, expansive Priorat that has sweet tannin and a huge finish. While it’s a very different wine than the 2013, it’s just as perfect. The 2015 is 75% Garnacha and 25% Syrah, aged 20 months in 40% new French Taransaud barrels, with 5% in clay amphorae. There are roughly 250 cases produced and it’s a heavenly, singular wine to drink over the coming 15-20+ years. Hats off to winemaker Daphne Glorian!”

The wine's color is a bit darker compared to its peers and its concentration is similarly thicker. But that extra padding does not take away from the inner elegance and finesse displayed here. Aromas embrace red rose petal, licorice, grilled herb and forest floor. The oak rendering is evident but not obvious: Dark smoke, crushed granite and ash give the wine a savory side.
