About the Cognac:
The Dudognon Reserve is one of the best values in Cognac. Made without additives or coloring, it's a pale gold color with subtle citrus and white fruit aromas. The palate is clean and long with tea, earth, citrus and spice. Far superior to the brand-name VS or VSOP blends and really worth trying.

A carefully chosen blend of younger brandies, with an average age of 7
years: 20% from barrel distilled in 1998, 40% from barrel distilled in
2000 and 30% from barrel distilled in 2003. Elegant oxidation and long
fermentation heighten the maturity and baking spices of the brandy’s
oak, like biting into an apple then waiting 20 minutes before returning
for a second nibble.
The apples are a mixture of the four categories: sweet, bittersweet,
acidic and bitter composed of numerous include Domaine, Bedan, Fagotier,
St. Philbert, Frequin Rouge, and the acidic Rimbault, Petit Jaune and
Blanc Sur.
Soft, sweet with great acidity and sings with notes of green apple,
vanilla and baking spice. Showing forthcoming apple flavors, along with a
touch of vanilla, smoke, spice and subtle hint of beeswax.

While most people refer to Calvados as an apple brandy, pears are also
allowed in the AOC. In the Domfront, or Domfrontais region, the clay and
limestone soils are much more suited to the strong, deep roots of pear
trees. Appellation law insists that at least 30% of the cider to be
distilled in the Domfront is made of pear. The Lemorton family’s
Calvados includes up to 70% pear. This pear influence makes not only for
a lighter-colored spirit, but also one which emits a more elegant
bouquet. The Lemorton family has a long history in the Domfront, with
Didier now running the domaine, 6 generations later. Their 9-acre
property is planted with both apple and pear trees, but the latter’s
influence is dominant; for every 3 apples in their Calvados, there are
approximately seven pears. Lemorton owns his own travelling column still
and as AOC law states a single distillation is required with Didier’s
Calvados exiting the still at a fiery 70% ABV.

Pellehaut from the roman pila haut (high point) is owned by the Beraut family. Notes from the Maker:
An orchard is bathed in the long rays of a late September sun. It is early evening and the air is still warm, tempered by a gentle breeze. The atmosphere is reminiscent of Van Gogh’s Arles and the soundtrack is the warm voice of Cesária Évora. Aromas of roasted nectarines, ripe apricots and succulent melon inspire the lingering first sip, soft as brioche.

On the nose, along with hints of honey, coffee, and spice. Soft and sweet in the mouth, and with excellent length on the finish.

"Its deep color is an invitiation to its pleasure. Everything is sensuous about this magnificent Cognac which is exceptionally balanced and complex: chocolatey nose, rich mouthfeel, and creamy and persistent length." — La Revue du Vin de France, May 2001.

Amber color, with golden tints. The flavors in the nose are very fine, roasted, spicy and toasted. On the palate, the tannins are round, unctuous and rich. Fruity notes appear (quince, prune). The end is oaky. Long finish.

Nice gold with orange tints. Brilliant. The nose is fruity with some crystallized orange peels, prune and quince. The second nose is more spicy (cloves, pepper). In the palate, the attack is frank. A lot of character in this intense Armagnac. Long.
